A bit of chemistry for fun: The chemical formula is sodium bicarbonate (NaHCO₃). When heated above 50°C or brought into contact with an acid (e.g., lemon juice or vinegar), it releases carbon dioxide:

These CO₂ bubbles ensure that your cakes stay light and fluffy and that your burnt pots come clean.
